QUALIFICATIONS / SKILLS / ABILITIES / EXPERIENCE REQUIRED:

Qualifications

  • Food Handlers certificate
  • High School Dimploma
  • Graduate of an accredicted Culinary Arts program
  • Red Seal or equivalent preferred
  • Minimum of 3 years related experience in a large hotel setting

Responsibilities

  • Prepares food as specified by the Chefs
  • Oversees job requirements of 2nd and 3rd Cooks
  • Provides leadership to 2nd, 3rd and Line Cooks
  • Prepares menu and banquet items to the standards set by the Chefs
  • Reads and follow prep lists
  • Must be current with new cooking trends
  • Reads and follows all recipes
  • Converts recipes accurately
  • Works to standards specified by the Chefs
  • Operates all kitchen equipment safely and correctly, and upholds maintenance and sanitation
  • Tastes and evaluates food before serving to ensure that standards are met; consults with the Chef if there are any concerns
  • Portion food as specified by the Chefs
  • Garnishes food in an appropriate manner
  • Follows production sheets accurately
  • Follows safe food handling guidelines, and Health Department standards
  • Cleans and sanitizes work area according to cleaning schedule
  • Understands and uses the “clean as you go” method
  • Must be flexible with scheduling
  • Maintains a consistent work standard
  • Maintains close communication and works cooperatively with Executive Chef, Administration, and coworkers
  • Upholds all hygiene and sanitary regulations, is clean and presentable (i.e., report to duty punctually wearing clean and correct uniform and footwear)
  • Ensures a safe work environment for yourself and co-workers by upholding the safety rules
  • Seeks opportunities to increase revenues, minimize expenses and increase employee productivity without sacrificing guest service
  • Promote professional work habits that will develop the respect and create return business from customers
  • Recognizes a job well done and rewards it appropriately
  • Provide fast and efficient guest service and respond quickly to the customer requests
  • All other duties as assigned
